Biochemistry in the city<\/h1>\n

Biochemistry in the city<\/strong>\u00a0is a project of outreach activities for the general public associated with the celebration of the 42nd Congress of the Spanish Society of Biochemistry and Molecular Biology (SEBBM).<\/p>\n

We aim to bring the work of scientists closer to society, particularly in the areas of Biochemistry and Molecular Biology, and highlight the importance of these disciplines in unsuspected areas of our daily life. This \u201csurprise effect\u201d is important to awaken the curiosity of the public and convey the idea that science is present in all our tasks, thus increasing the scientific culture of the attendees and their appreciation of the value of research.<\/p>\n

Activities will include informative talks and round tables given by specialists, where the presence and impact of biochemistry and molecular biology in places other than research laboratories. Topics\u00a0such as leisure, food, justice and energy usage,\u00a0will be explained to the general public with the goal to\u00a0integrate science, culture and society.<\/p>\n

In this exhibition, the visitor is offered a tour of different aspects related to our diet. Through 11 panels of educational content, with simple texts and illustrative and entertaing images, we show the importance of food for our life and our health. We explain how the brain controls our way of tasting food (\u00abneuroscience of taste\u00bb). We also explain how science is behind familiar actions such as food cooking. Special emphasis is placed on the biochemical processes present in the \u00abmolecular gastronomy\u00bb, which today is known thanks to the work of great international chefs. These consists on the application of physical-chemical scientific principles to the domestic cooking. The genetic information contained in the DNA of our cells serves to build our body and develop the characteristic functions of life. Until now it was believed that all the necessary information was encoded only in the nucleotide sequences that make up our genes: the reading order of the four ATCG bases of the genetic code. But today we know that there is something else. There are chemical modifications that, without altering this DNA sequence, control its activity: they are something like molecular labels that determine when genes are activated or not. Epigenetics is the part of biology that studies those modifications of DNA and the proteins associated with it. External factors such as diet or pollution influence such epigenetic modifications and alterations in them can cause diseases. Therefore, it is important to understand the mechanisms involved in the regulation of these molecular markers. Since a few years, biochemistry has entered the kitchen. Actually, it was always there even if we did not know it. Humans cook food to make it more digestible, but also to increase the pleasant sensation produced by its consumption and as a social activity that creates cultural bonds. What we do when cooking is to transform the properties of foods, which are no more than organic molecules, through the use of chemical reactions based mainly on temperature. The better understanding of these complex reactions and the use of laboratory techniques now allow us to produce increasingly sophisticated elaborations that add new sensations to the gastronomic experience. We will approach this molecular cooking by the hand of a biochemical expert who is also an amateur chef: Jorge Cu\u00e9llar, researcher at the National Center of Biotechnology and participant of the TV programme MasterChef 2. Jorge will explain the biochemical basis of cooking and will also talk about the importance of understanding the biology of nutrients for a healthy diet.
